1 tenderloin
1 package bacon
3 Firm Nectarines
3 Firm Peaches
Balsamic Syrup already prepared (recipe at end)
1. Fire up the charcoal.
2. Halve Nectarines and Peaches, remove pits.
3. Slice Loin into half inch medalions.
4. Wrap Loin sections in bacon and skewer with toothpick
5. Place fruits cut side down on grill and cook for 4 minutes.
6. Remove fruits and add medalions to grill. Cook for 3 minutes on both sides.
7. Drizzle meat and fruit with balsamic syrup.
Balsamic Syrup:
1 jar cheap balsamic vinegar (I like raspberry)
Lots of time.
1. In a pot, pour vinegar.
2. Simmer on medium high heat until half of the vinegar has evaporadted.
3. Reduce heat to medium and simmer until it is reduced by half again. It should coat a spoon at this point.
4. Pour into jars and refrigerate. To use, warm in a hot water bath and drizzle with spoon.
