I'm wondering how a person could get this started? Would you advertise on craigslist? How do you build customers? Any input?

What would a person get here in the midwest for a cleaned fresh frozen coon carcass?

I don't know, but some states might require a special license and inspection. I know I can't sell rabbit meat, I can only sell live rabbits. When I used to sell rabbits I sold the live rabbit, then offered to butcher it for free.
It cost me $1,250.00 to sell fish off my boat, a 250.00 license and a $1000.00 bond. That was to sell a whole fish oor raw crab. Add another 1000.00 to sell fish by the pound, fillets, or steaks or cooked crab. So I doubt you could sell coon or beaver in Oregon, at least I've never heard of anybody doing it! (legally ;))

I like this topic, I think if you were to put an add in all the area newspapers and run it for the next month especially this month right before rifle season and start to get a few customers is the first thing! Then when they get there I would try to have some samples of each product you are going to offer for them in the fridge so that you can give them an idea of what product they are going to receive. From there if you have a good product and keep your locker up to code, word of mouth will get your locker going strong and make it work. But before i would try anything make sure that you have an inspector come in and be sure that everything is up to speed on the inspection side that way you dont get shut down before you really get started.

I tried doing this back when I lived in Columbia. I put an add on craigslist (which was taken down). I put an add in our local paper and had some luck. Problem is folks call you and want one or two coons. You'll lose your shirt delivering them all. I recommend trying to find a guy that will buy them all. Back in Missouri I had a guy that would pay me $2 a carcass, no matter the size. He came to me and wanted at least 100.
If I were to try to establish a market, I'd try to be in the same spot once a week and have everyone come to me. Say, in a parking lot from 10-2:00pm every Sunday. Let your clientele come to you.
I had a buddy that sold some carcasses just by driving through a neighborhood and asking. PM me if you'd like to hear a funny story about which neighborhoods he chose.
Pat, as usual, you are right....

Are you talking about a butcher shop?
I would think the FDA would be heavily involved with any upstart meat markets. I'd check on the licensing and e\stablishment requirements first. Unless you are going to go all-out, might be cost-prohibitive-

Hey thirsty, thats good advise maybe a stop in a parkinglot would work. Of course advertise in the paper or have some sort of flyer hanging up might work.

lol ahh, find out if it is legal in your state and if not, if you can ship them out of state.
You are probably going to have to build up a trust with the coon eating community before the sales are pouring in. I have wondered as well, but the people I know who do it are very tight-lipped and I can't blame them.

I think its ok in nebraska to sell meat. But I plan on checking for sure. Last year I talked to the Games and Parks comm about selling glands and skulls, but did not ask on the meat question.

Not a problem here in Mississippi. I just use word of mouth. Friends tell friends. I sell for 5 to 8 dollars each, and can't keep enough coons.
