Elk Salsbury steak. Mix 1lb of ground elk with 1 pack onion soup mix, 1/2cup of bread crumbs, 1 egg and season with salt and pepper. form the mix into patties and brown on both sides with a little oil in the pan. Remove the patties and make a gravy in the pan with the drippings. once the gravy is done put the browned patties into the gravy to finish cooking. I have made this for several years and when I serve it to people the just love it. I make a rue for the gravy but that is an acquired skill, the guys from Louisiana will know how to do that and maybe could explain it better than I can, but basically it is butter and flour, browned in the pan then add cold water to the required thickness and let it cook. Any ground meat will work, I always use elk though.
