1 coon
1 large can of candied yamms
1 1/2 teaspoon of ground red pepper

Boil coon tender, remove from stock, place in baking pan, and then cover with candied yams. Season to taste with plenty of red pepper, black pepper, and Salt. Bake for 30 min. at 350. It is a real simple recipe that is a favorite around here for those that eat coon.
