I have been trying to salt carp the last couple years and I do not know if I am doing it right or not. What I have been doing is taking a five gallon bucket and softner salt (50 lb bag) and doing a layer of salt layer of fish layer of salt etc up to the top and then putting a cover on it. The carp to me seem to get really really dry. I have been catching coons on it but is there a better way to do this so it is not so dry?

Just add enough water to make a brine to cover the top of the fish if the carp don't have enough liquid to produce their own, most fish do. I salt menhaden the same way as you and never add water, but menhaden are extremely oily also, and that may be the difference.

add water and make it a heavy brine

not too much water though

plain ol table salt will do you

if the coons like it you may not need to change a thing \:\)

just dunk it in the water, a little swish and throw it up into your pocket etc.

Thanks Guys! Is it okay to use softner salt because that to me is alot cheaper then table salt or does table salt work better?

Ditto on 50 lb. bags at the feed store, but usually $8-$9 here, price of living on the east coast I guess.

I just bought some fine livestock salt a few weeks ago. I got it from TCS. It was $3.56 per 50lb bag. This stuff looks just like table salt.

We filleted 150lbs of carp and cut it in 2x2 cubes 2"layer of salt, a layer of fish. Put more salt over the fish and repeat.

We ended up with 4- 5 gallon buckets of fish. That should last 2 of us the entire season I hope.

Going to go shad fishing this weekend hoping to fill 5 or 6 40 qt coolers with shad. Pickle the roe, smoke and pickle some fish and salt the rest for use as bait for the year.
