Cream Cheese Jalapeno stuffed Duck Breasts

Cream Cheese
Small Can of Jalapeno's
Bacon
1 Duck per person!

Take cream cheese and can of jalapeno's and mash together.

Fillet the breasts off of the duck, the butterfly the breasts. Take a couple of tablespoons of the cream cheese mixture and spread over the breast. Close the breast up and wrap with bacon.

Place on grill and cook until medium rare.


Candied Duck

Another family favorite.

Apples (about 6)
Brown Sugar
Ducks (2 large ducks or 3/4 medium sized ducks)
Flour with salt and pepper added

about 2 hours before you are going to eat, slice your apples into 1/8's and place on cookie sheet. Sprinkle the brown sugar over the top of the apples and allow to sit until you are ready to prepare dinner.

slice your duck into strips or cubes (this is up to you). The dredge in flour/salt/pepper mix. Fry duck until medium rare. Then add the apple/brown sugar mix and cook until medium. The duck will be coated with a apple/sugar glaze. Serve with rice or pototes.
