build you a pocket out of those rocks, stack some rocks to build a pocket where he has to go in and get that bait and build it now so that it will be a normal part of the rocks come season. use that big rock on the right side of the creek and see if you can find one about the same size put them close enough together to build your own pocket or find some other rocks for your roof put your bait in side of the hole you can either put a trap on both sides or close off 1 side so he has to come in from the other, just my 2 cents

Welcome to Maine. Not exactly pocket paridise is it?
First picture, see that tree stump with dead limbs on the left? Chances are one could create a blind set at the waters edge or punch a hole through the crap under the limb leading to the water. If there is no clutter under said limb, place some and create a tunnel through it.
First picture: How deep is the water in the fore ground around that rock shaped like a triangle? Is it deep enough that mink might swim around it looking for a trout but instead find a body grip?
Second picture: What about a blind set at the ledge on the left? What about roughing in a pocket at that ledge. Often you might not get the picture perfect pocket like you see in the videos but it does not take much pocket to wedge in a fish
What about stone tunnels at the waters edge and on dry land?
What about an old J Curtis Grigg stream liner set at that ledge? Boy now I am showing my age. LOL

left pic ..... left side of the stream where the rock will force the mink .... right side where the blowdown forces em low or high .... then watch for dry trail goin thru the blowdown itself ..... also check the culvert up there near the road ... lol ..... right pic ...... high and low of the tree clump on the left shore ,,,,, right shore ..... bank forces mink as well as the rock further upstream, and look like there may be a tunnel under the next rock up
