Made a 5 gallon pot full. Gona freeze what we dont eat tonight. It's SURE GOOD. Even better comm'n in after trap'n all day.

That sure is some good stuff. We ate 3 or 4 gallon at Bland and then had to go to N.C. the next weekend and try it on again. Thanks Newt I really enjoyed it and No Bottomline both them bowls didnt have clam chowder in them. I cant speak about the next day though. take care all

Newt's Calm Chowder
1- bag of Chowder clams (100) Diced not ground, saperate the meat from the juice.
2-pound bacon
8-cups diced Celery
8- cups Chopped onion
8-pounds Tomatoes
16-cups diced potatoes
8-cups diced carrots
1-table spoons of Thyme
2-table spoon Black pepper
2-table spoons Crushed red pepper

Partially cook bacon,add celery & onion cook till tender.But not brown.
Add water to clam juice to make 2 gallon.
Put everything in a big pot and simmer on the wood stove till the potatoes and carrots are tender.
Mix cold water in 3/4 of a cup of Corn Strarch,add to chowder to thicken a little
Add more spices If you like.

This makes about 7 gallon
I made 5 gallon yesterday ,cause I only have 75 clams. So I cut everything back a little.
