This one is great for topping pizza, lasagna etc. My wife has me make this loose (uncased) for these foods. It is also great when linked

3 lbs venison(remove all fat) or buffalo or beef
3 1/2 lbs pork shoulder
1 1/2 lbs Bacon trimmings
2 TBL Tabasco (red)
3 TBL Paprika
2 tsp Oregano
1 tsp black pepper
1 tsp Cayenne pepper
1 tsp sage
2 tsp fresh ground fennel seed
1 tsp garlic powder
1/4 tsp onion powder
1 1/2 tsp liquid smoke
1/2 cup red wine (burgundy works well)
1/3 cup red wine vinegar

Grind through fine plate, mix all ingredients, refridgerate overnight. Case in hog casing links or loops or bulk. This is also great if smoked.
