Does anyone know of a chart that shows incisor tooth marks, so that you could
tell what specie of animal is chewing on wood?

Good luck with that chart. Too many variables with rodents size and maturity levels. Many times the forensic information found on site and where it is found can be helpful as to the specie that caused the chewing.

The real answer to this is one that comes with experience and walking the walk for a while. Even some seasoned individuals would have a difficult time in identifying some chew marks without some other contributing information to make a credible interpretation.

Just my 2 cents.
