How do you guys recoup the cost of your liability insurance deductible? Does your contract exclude the first $500 of damage?

Insurance premiums and deductibles (if you ever have to pay the deductible) are both built into your operating costs through your overall pricing. They are costs of doing business. Customers are not going to pay your deductible. It's not their business, it's yours. That cost is not passed on to *that* customer if you have a claim, it is a shared cost by every single customer you service. Liability insurance is to protect the customer, and is provided by any service industry for clients. I hope this addresses your question.
