When I was in high school there were tons of groundhogs on the Blueridge Parkway, before coyotes came. We would ride back and forth til we saw one. One guy would get on the back bumper of the truck with a fish net. The other of us would drive back by slowing down while the net guy would jump off and try to run it down. One summer we caught over 30. Would have to hurry and get the hog in a dog box. They were mean as well. We gave them to our buddies dad to help advanced his coondog pups fighting abilities! Now you rarely ever see a groundhog up there.

I'm not real fond of a lot of wild game. That said, Grounhog is definitely top 5....in a crock pot.

I used to eat them pretty often. Tastes a lot like rabbit.
I'd just cut them up, boil for a while, shake the parts in a bag with flour salt & pepper =sother seasonings, and fry in bacon grease.

It's been a while but this thread has me thinking about taking a walk with the .22.

do like a squirrel or rabbit- once its pressure cooked, dunk it in seasoned flour, fry, and make ya some gravay

Cut that hide into shoelaces and sell to civil war reenactors. Or make a banjo head

Saw a ground hog yesterday with no brown fur at all. It was black with a little gray.

I eat them all the time. Especially the young ones. I try to get them skinned, guts out, and on ice pretty quick. My favorite is in crockpot with barbecue sauce. I made it a few years ago for a pot luck function at work. My coworkers really cleaned it up. Later I revealed what it was and many were in denial. Needless to say I never was asked to bring a pot luck dish again

Probably shouldn't brine it BEFORE freezing, that might make it not freeze correctly and encourage spoilage.

I always do it before never had any probs they did used to cure meat with salt ya know all i used is salt water it just sucks the blood out of it. Everyone kept saying thats nasty ect i was like why all thet eat is greens and mabye acorns or somthin

I saw a YouTube video where a guy smoked a ground hog. Man it looked tasty. I’ve wanted to eat on ever since.

That critter, however you call it, range ends (or used to end) about 20 miles inside the South Dakota line. Until about 6 years ago, never saw one in this state any further west than that. Saw some in Day County in the ne part of state in 2012 and that was about 50 miles into South Dakota so perhaps they are expanding west around here. Because of their rarity here, I have never shot one but would try it. Most rodents cook up fine with some smart handling.
