little tidbit.worked 20 yrs at Cutco cutlery,a high quality knife maker and all their knives get their final edges put on by taking the small burr off with a very very high speed buffer.

I can free-hand sharpen many knives on water stones but my favorite system is the Edge Pro. I get the most durable/long-lasting edges that way. And between sharpenings to realign an edge, I use a ceramic rod like Bob referrred to.
Wildlife Removal, Etc.

the OP posted a Wicked Edge (or WE) sharpener - very nice rig with the price tag to go with it.
I go with a combination of lansky and free hand stones and strops. I can get a mirror finish and smooth shave finish, if I want - but more often than not, don't need that kind of sharpness.
that fine of an edge doesn't last near as long either. typically run my regular use knives on a medium and fine diamond stones - then a couple passes on the strop and its good to go

This let me sharpen a knife very sharp. People who have become obsessed with this device have been able to slice a hair in 1/2 after sharpening a knife. got video of that? I don't believe a hair can be sliced, never mind into equal pieces. A good flat rock. I once got my Barlow so sharp, when I closed the blade it actually made a sonic boom. Scared the dickens out of me. I immediately cut up some old barbed wire to take the edge down. Be careful boys. That is way more believable.
