This is a wall hanger coyote, called the tannery they prefer I leave it fur-in (less work for me). Do I leave the foot as shown or flip it inside out?

Leave It like your picture shows. You could also place a chunk of cardboard up In to the leg to keep It spread out and thenyou could pin out the paw to keep It opened up.
The other thing you can do Is place your board so It allows the legs to hang away from the belly side of the animal. That will allow the legs and the arm pits to dry.
I just used a step ladder rungs to get the board to lay at a angle.

Here's how the pic was taken, I hang mine that same way, I usually just cantilever it off the top of the bench. I was using paper towel rolls for the legs but I saw Trapper Dahlgren was using plastic hangers and I like that way better.

Turn the footskin inside out to dry.You can turn it back when turning the skin or don't turn anything at all if you ship to tanner. [Linked Image]
