Just wonder what works for your setup for skinning coyotes best. I build a frame that’s 8’ high with the option to extend it further to 12’. I would rather keep it 8’. I’m just wondering what the favorite hold down methods are. Im leaning towards making the roller type that I can roll the hide as I go, but I’m also looking at welding the vise grips on the sides so I would have both option on that set up. Also the trap door looks pretty efficiently because I could just keep pulling the hide down through the closer it got to the top. Any thoughts.

It's all in what you get used to. I have built several of all three designs and the guys that use them all think the design they have is best. The biggest thing will be if you have lower ceilings the roller and hide gates are slightly faster to lower down and finish the pull but the vise grips work equally well if you know how to use them and you don't have to open them as far before using the hoist. IMO just pick one and I'm sure you'll develop a method that will work great for you.
