I wish I had the old man's recipe... he pickled some suckers once and they tasted better than pickled herring.

like his salting technique, I'm going to try it.
The only exception to his method; tilapia, yuk, especially Walmart tilapia, double yuk.

Might be bit different portions of things but that is pretty much how I do mine. For sure is same way I brine mine. Usually do Northern but suckers work well too.

This is a video I made of how I make pickled fish. There are probably a jillion recipes out there, but once you do it a couple times it's easy to dial in how you like to make it.

Its really good but a bit on the tangy side. I think if you would increase the sugar by one cup it would be perfect. Good stuff though.

I had done some redhorse and came out better then I thought it would . it is on the sweet pickle side use a mix with onions. I found the recipe on the internet and also from the state DNR fishing book I got many years ago.

Yes sir the wait is the tough part. I think it needs refrigerated, that is where I'll store it.
