I don't know from experience but I read on here somewhere that they do two of the normal responses, Roll or dig. I think it was in the archives.
Ya can't miss fur if yur traps are out somewhere. Or so I've been told.

So you do or do not break the egg once it is placed in the hole?

They want to eat it is my experience, which means a digging response if they work the set aggressively. I bet you could add other ingredients that might cause other reactions but by itself it seems to be a digging response. I will say it seems to me coyote will pee on or near a lot of unique odors whether its food, curiosity or a territorial formulation.
I will say this, you will learn more testing yourself.

Wonder how so many turkey, quail, duck, etc eggs are destroyed on the nest? Guess just luck of the draw since eggs have no smell? And those aren’t even fermented.

It's not the eggs so much as the scent left behind from the sitting hen. Anything white In the hole Is more of a eye appeal thing then a scent thing. Some of the best lure I ever used was SFE synthetic fermented egg.
