I got wrangled into cooking a lynx up for a crowd that many will have never tasted it before and looking for something other than soup what's your favorite go to recipe.

Lynx fried rice is great.
Any recipe for chicken fried rice will work,

The wife takes the backs straps, hammers them out, a little Montreal seasoning and grills it.

The only time we cooked it up we made fajitas. Used lynx in place of chicken. Its just the idea that it was a cat and we have lots of other good meat, but every time I skin one I think to myself, I could easily eat it again if thats all I had.

I've tried it lots of different ways. Can't really go wrong with any chicken or pork recipe. My wife made some Mongolian lynx the other day. It was great. It might be my new favorite way to make it. Basically cook it the same way you make Mongolian beef.

Fry meat in a corn starch/egg wash
Make the sauce
2 teaspoons of sesame oil
1/4 teaspoon of powdered ginger
1/4 teaspoon of garlic powder
1/2 cup of soy sauce
1/2 cup of water
3/4 cup of brown sugar
Mix the fried meat in with the sauce, cover and simmer
Serve over rice

Prepare like stroganoff with a creamy gravy. Serve over noodles.

Good. And good for you.....

Beat backstraps and boned meat with a tenderizer, soak in buttermilk over night, dip in egg wash, roll in Louisiana chicken fry and deep fry. Can’t beat fried food, it’s good for ya.

I’ve eaten it a lot but usually just throw it in the pan and cook it with a bit of salt and pepper. Would like to know how you guys keep the flea powder or spray from contacting the meat while skinning. Always a pita for me.

Good question. I've wondered about that myself. My wife always washes the meat off really good but I've often wondered if it's safe. I'm still alive so apparently it can't be too bad for you. But if you find the answer I'd like to know.

I am fortunate that I have not had to use the spray or powder so can't answer that. I can assume that once you start peeling the hide down it is away from the meat and is pretty much a non issue though

Never seen a bug on a cat here ever.
Marten, fox weasels and squirrels will have fleas if trapped in the fall.
No fleas to worry about on dead frozen animals in winter unless fresh caught or the very odd one caught alive.

I never saw a flee on a cat either.

I batter fried Lynx Mc Nuggets and dipped in sweet and sour sauce was pretty good. Had soup before, was not bad. Make sure its a young cat and not an old (This word is unacceptable on Trapperman) smelling female.

Fleas are fairly common on the lynx I catch. I give my neighbors most of my lynx carcasses (I keep a few for bait). I tried some stew they made with it and it was fabulous.

1-1/2 lbs. any type lean meat, cut into thin strips (trim off any fat) LYNX was great fixed this way :-)
1/3 cup flour
1 tsp salt - 1/4 tsp pepper
1 medium onion - sliced thinly
1 small green pepper sliced into thin strips (or to taste)
1 lb can of stewed tomatoes
1 - 4 oz can mushroom stems and pieces, drained
3 tablespoons molasses
3 Tablespoons Soy Sauce
1 10 oz. pkg. frozen french-style green beans

Put raw meat strips, flour, salt and pepper in Crock Pot. Stir well to coat steak.
Add all remaining ingredients and stir.
Cover and cook on High 1 hour, then turn to Low for 7 hours.
Stir occasionally.
Serve over rice (wild rice is good) with good dinner rolls.
Makes enough for 4-6 people.
This can be doubled using a 6 quart crock pot.
--------

We made this for my cousin and his wife, they had second helpings, loved it. Afterwards I showed them the picture of the Lynx I caught and told them that was what they ate (it was). They were fine when they left here a couple hours later, however, Cousin's wife decided on the way home that she was so sick they had to stop at the Emergency Room. Interesting what the mind can do isn't it? lol
