Is it necessary to gut the fish to make fish oil. Wanted to use my walleye carcasses. They have large globs of fat in them. Every video I've seen says the gut your fish first. Didn't know if there was something in the guts that would ruin the oil.

Working without the guts will produce a cleaner oil and better final odor. Keep as much fat as is possible. Anytime you add potential bacteria elements it will change odor and color

One of my buckets apparently had a seal leak and I now have maggots in that bucket? Will that be an issue?

Maggots can ruin a batch of working fish intended for oil extraction. It depends upon how long they have been in the fish. If it doesn't appear to be too badly riddled with maggot trails and tunnels you can freeze the batch and thaw. Set it back out once again to start working.

I have skimmed off the top layer of fish at times to get most of them out and discarded, scraped the sides and lid well with a spatula and spray with some insecticide to kill the rest. Then re seal the bucket better. It can be challenging to keep flies out of aging materials at times. Even for seasoned individuals doing this you get a bucket or so that those flies get in thru your protection.
