Pork chops sliced thin (feed more folks that way) and fried, some fresh poke salad you picked that morning (with a spoon of bacon grease), a can of hominy and some biscuits with butter, yum yum.

In New Mexico at a Mexican restaurant, the special was homey and tripe. That sound good? My PA Dutch grandmother used to make and serve us pickled tripe. It was pretty good.

I thought grits where made from hominy?
I had grits for breakfast a lot when stationed in Kentucky. They were okay but not good enough that I had them again after leaving there.
