1 Venison Tenderloin, cut into two equal length pieces, then butterflied
1 C bread crumbs
1 egg
salt
pepper
1/4 C oil

1: Hammer your venison with a meat mallet until it is 1/2 inch thick.



2: Beat egg, salt and pepper together. Coat steak in egg mixture.



3: Dredge the egg-coated steak through the bread crumbs.



4: In a skillet, heat oil until hot, but not popping. Add steak slowly, letting it sizzle so that it doesn't stick.



5: After 2-3 minutes, turn steak over and cook for another 2-3 minutes. Voila!

pour off all but 2 tbs of oil, add flour and milk and make some gravy....

Sounds delicous. Sometimes I use crushed saltine crackers instead of bread crumbs and add a little spicy season salt into it.

I've had it.Tastes alright.To me it takes away from the flavor of the deer steak a little to much.good tasting but just not the same flavor.

ive used this recipe. its fase and easy to make and tastes delicious, i served it with a side of four cheese mash potatoes and corn. good meal when you dont feel like cooking alot and still crave a good home cooked meal. thanks for the recipe lil'bit

I do this style of venison alot. I will season the steaks, then shake them in my dry coating for fish I use.
Sometimes I crave a southern fried (name I give it) at which time I will add a good pepper gravy to the fry-pan.
