I usually slice medallions the width of bacon and wrap the bacon around it. Season with garlic and onion powder and pepper. Stick toothpick in to keep bacon on. Get the grill to 650F cook on side till bacon crisps up and grill on top and bottom till med Rare. I like it served with wild mushrooms, chanterelles are excellent, and grill brussel sprouts. How do you like your backstraps?
