Last winter the big rage around here was elderberry syrup,I know health food stores sell it but I would like to try and make some myself.The berries are getting ripe so I want to pick some and make it.Does anyone have any experience making it? I have drank elderberry wine but no syrup.

2 cups fresh elderberrys. 2 cups water. 1 tsp cinnamon. Simmer it for about 20-30 minutes until it becomes a syrupy consistency. Then put it through a food mill to remove seeds and collect the juice and pulp. Allow to cool. Add 3/4- 1 cup of raw local honey. Store refrigerated. Keeps 4-6 weeks.

Our first elderberries of the year, in harvestable numbers, are ripe now. There should be over a month more of production.

If you are using it for it's wellness properties, you want to make sure to use honey and local is always best.
