Quarter them, parboil with onions, salt & pepper. Drain and pat dry. Fry in cast iron skillet with small amount of oil until brown and somewhat crispy. Serve with stewed tomatoes, fried potatoes and cornbread!

Oh come now, Law Dog, if you like early puddle duck, I'll like mrats. If you don't like non-grain fed duck, then you'll probably won't like muskrat.
I only use the back legs and haven't done any for a while. You can cook the pieces whole but a recipe I really like, and you can use it with smaller ducks as well, is:
cube out the meat, dredge in spiced flour, and pan fry until about half done. Pre cook a cup of white rice Add mrat meat, rice, and a can of creamed soup; mushroom, celery, or chicken, whatever you want.If you want a veggie or two, throw some frozen stuff in that's been thawed Bake at 350 F (my de fault baking temp) for 20-30 minutes. It should be bubbling.

Rats aren't bad. This works for beaver too.
Bone the rat meat and cut up. Season with salt, pepper and paprika. Cut up 4 strips of bacon, per rat, into 1/2 inch pieces. Get a deep pan, (I prefer cast iron) good and hot with some oil and brown the rat meat and bacon together. I start the bacon, then add the rat meat. Get some color on it with high heat. Fast and hot. Take it off the heat. Add cut up potatoes, carrots, onion, crushed garlic cloves, rosemary and thyme. Add beef broth, or canned cream of mushroom (my favorite). Put the whole works (in the pan) into the oven at 350 for about 80 minutes.
The trick is, use frozen rat meat. DO NOT go from the skinning shed to the kitchen. It won't taste the same if you do. Especially if, as some here have talked about, you have a case of the rat skinning vapors. This may be a meal better enjoyed after the season.
Anyone ever try bobcat? Lion is not bad. I'm thinking about trying Bobcat.

when I was a kid we would stop at the Smyrna diner in Delaware for breakfast on our way to go fishing and you could smell them cooking it, they advertised them as marsh rabbit's nasty smell from what I can remember

Moist cook hams w/backstraps until tender, drain, dust with nutmeg, wrap w/bacon strips then brown till bacon is crispy. Good eating. Also can't be beat smoking them. I agree with the freezing meat first(or soak in light salt water) rat blood still in meat make it taste "gamey" to me. The moist cooking while remove some of it as well. Also brining to smoke.
I've learned enough thru the years to now know that I don't know enough. KNOWLEDGE IS FREEDOM.
