I am using up some of my stored eggs. These eggs are six months old stored at room temperature in my kitchen cupboard in pickling lime water. Still perfect eggs.

I have eaten some over a year old. The yolks start to get saggy and the whites a little runny but still perfectly good.

They need to be non washed eggs. Store bought eggs are washed so don't work they say. I have done quail eggs as well.

As a side note you can see these are fertile eggs by the small white bullseye.

Look good. Would love to see a comparison to washed eggs.

We have several gallon jars of those also. We had 20 doz given to us last fall and didnt want them to go to waste.

Waterglass is different than lime-water.
You can store washed eggs for over a year, if you know how.
I've personally done 10 months with washed store bought, who knows how old they were before I got them, eggs.

Sorry I must of got busy and missed this.

But my hens are laying good now and was just going to do another batch. I just add six tablespoons of pickling lime to a half gallon of water and add in unwashed eggs.

Have batch made 2 years ago. Still good. Every month pull a couple to try. Most yokes break. They become stuck to shell a little. I use food grade 5 gallon buckets, distilled water, and lime. Only put 10-12 dozen in a bucket which fills it to about the 3 gallon mark. I add eggs, water, and lime every day til I get to my full mark. Mostly use them for baking, but have eaten plenty scrambled or as omelets.

Nope just like described. Pretty simple.

Actually, Waggler is correct. Waterglassed eggs are stored in Sodium Silicate. The eggs you're doing Jeff are technically called Limed eggs, but the Internet chose to rename them water glassed. Actual waterglass IS sodium silicate.

It's the same concept, just a different solution. Both work.

Going to be most expensive deviled eggs ever made in my life.
Guess should have glass packed a bunch away back when they was under a $1.00 dozen.

I know I wouldn't hesitate to use them eggs if you all been doing it. I'm sure my grand father knew how to do all that. I was just little guy when he died. I'm told he had 400 hens when was selling eggs. I don't recall maybe 100 and helped butchered them when he quit egg business??

I may have to try it just because I like doing that kinda thing.
Getting the wife on board to use stored eggs be whole different deal.

Thanks I never knew of that process. Baking soda roasted with silica sand. But yes same alkaline solution as lime water.

I can understand the why of unwashed eggs, as they all hatch the same day , weather they were laid 10- 28 days apart.
A natural seal on the eggs , that washed eggs takes away.
So what's your secret?

I think water-glassing with sodium silicate might be a different process. Water-glass is basically glass dissolved in water. It is used in radiator and engine block stop leak, when exposed to air it dries into a what is essentially glass, sealing whatever it is leaking out of; like a radiator. I imagine eggs dipped in a solution of it and then dried would seal the egg. Just guessing.

Naw that's not how it's done. They're kept in the solution same as the lime water. The difference though is the lime water is, well water-like while the waterglass is more viscous.
