Pretty common around here. I suppose it's a scandanavian thing.

Eat it every Thanksgiving and Christmas for 47 years. Never made it. A lot of swedes settled were I grew up and our families on both sides were some of them.

I love potato sausage. I’ve never made it but I have relatives that do. One day I’ll have them teach me. If you got relative know how to make this from scratch. Go and have them show you don't do the some day. Most of us have to many things on some day list. Go do it and write it down in detail or get them to. Mixing sausage is not rocket science. Getting the spices right though can be. Mac

Potato sausage was pretty much a staple during my childhood In NW Wisconsin. You could find it at every meat market, and was made at home by many.
Then out of the blue in the late 60's or early 70's our great government stepped in and pretty much shut it down. I don't remember the details. But, it was due to sanitation. At the same time, or nearly so, wooden butcher blocks were pretty much banned.
After Big Brother stuck his nose into it, potato sausage only got made in single batches months apart. I still see it occasionally, still in sporadic batches, probably supervised by government germ patrol.
