If you're main goal is to flesh coyotes is there any advantage of of having two different fleshing knives or would a guy be better to get one size and get proficient with it? Then what length should a guy start with.

One size,10-12" curved blade for larger animals,and a stirrup flesher for the small critters and touch up on clean skinned beaver when boarding the beaver. [Linked Image]

I have one of those stirrup shaped fleshers, it was like a cheap $10 weibe and doesn't do a thing to a pelt as far as removing any sort of flesh. I know it's of low quality material.

A question, is one side supposed to be sharp and the other dull?

With the weibe yes. With the better caribou flesher both sides are sharp.

Thats a good one.I have a zeph,also a good one.You can use those for frost scraping if you keep them sharp.
The cheap ones are next to useless.
