You can teach him to hunt even though he’s not a pup and he may have settled down some so you would have that going for you.
Basic obedience is crucial sit stay heel and leash training all very important. Something that’s very nice is teaching them to go to there kennel on command and sitting while you feed them so they aren’t all over you. YouTube is very helpful I like standing stone kennels they do great work and really explain things well. The wonderful thing about gsp is they’ll pretty much do anything hunting related if you know how to teach them they’ll point birds for you they’ll flush for you and retrieve. They’ll even track deer and find deer sheds.
Good luck and happy hunting

Artrapper hit the nail on the head, obedience training is very important. I rescued a year old GSP and hunt pheasants/grouse with him. He was caged for approximately 23 hours a day with essentially no training and was pretty wild. My friend who trains Weimaraners helped me out with him and boy did I learn a lot. I don't know how much training he has had but I would try to work with him as often as possible. 2-3 times a day is ideal to really pound the obedience in. Make sure the dog understands the commands before enforcing them. If the pup gets excited-like out of control excited- tackle him and hold him against the ground until he calms him down. I was amazed at how well it worked for mine. Bird work will follow after it learns a good range of commands; it's hard to train off of a lead if it doesn't listen to you.
