So, after all these years I decided to try for some mink.
I had exceptional luck with 12" suckers cut in chunks for pocket sets.
I can get a small, regular supply of them through the winter.
Thinking of chunking them frozen, and vacuum sealing them to keep them fresh.
Should I add any salt, or just straight chunks?

I just freeze them fresh without the salt.

Another option is to put a layer of salt an inch or so thick in a bucket and then a layer of fish and then another layer of salt and then another layer of fish and so on until the bucket is full. The fish will keep indefinitely that way.

I prefer fresh frozen myself.

A little salt wouldn't hurt and shouldhelp in freezing temps

I'd stick with fresh frozen. I had terrible luck with salted fish. It did not work well for me at all.

We used to net suckers in the sprng and freeze them whole,then stack in burlap bags in the freezer.Pull them out the freezer as needed in the fall and chop in 3rds,
Frozen fish lasts a bit longer in the fall in a hole or box.
Salting bait makes it smatchey and not attractive to animals.
Ungulates are atttracted to the salt however in winter.

then use the heads and tails for bait

The chunks are just about the right size for catching big catfish with
