Guys I’ve been trying to put a name on an apple tree that was pretty popular when I was a kid ( 60’s and 70’s ) . Back then a dwarf was a short person, so the trees would have been of standard size. The apple was late to ripen and stayed on the tree way into November. My memory says this was a very sweet yet tart apple with very white meat or pulp . I have a tree that’s about 15 years old that has not produced enough apples to be taking up space in my orchard. I would very much like to replace it with the tree I’ve been talking about , I just don’t know what it’s called . Any help from you orchard guys would be much appreciated.
P.S. The outside peel of this apple was a deep dark red color.

Sounds like what we used to call a transparent apple, they make great applesauce. Transparent is an early green apple. Could be a northern spy but the extra white flesh doesn't quite add up.
My fear of moving stairs is escalating!

Deep dark red could be Arkansas Black. I believe it's a late apple it is a long keeper. But I'm told it's hard as a brick at picking and only softens with storage. My first thought.

The original, TRUE Northern Spy is yellow-fleshed. Some of the apples they call Northern Spy today are NOT the real McCoy.

I thought about Arkansas black too but the flesh is not extra white is it? Never handled one so I don't know. I'm seeming to recall that either it or King David is a winesap progeny so it might be yellow fleshed.
