OK I'll play. As you can see I'm not from the south, but I love crawfish!!
My guess is the one on the left isn't the one you want to eat. Why? Under cooked?

Eat the one on the right. Don't eat crayfish or crabs that were not alive when you threw them in the pot of boiling water. I don't know about that LSU study, but I don't think you can go wrong with the curled tail.

I'd say the one on the right just because it looks like it was boiled "properly". Have no idea otherwise. Leave the right or wrong for awhile though!

If crawfish are like shrimp, they are almost always over cooked. Dead right. Dump off water as soon as the tails float; pacific shrimp anyway. Segregate into at least two sizes before boiling if you have big ones mixed with smaller ones. Otherwise if over-cooked they get a little rubbery.
