Curved tail are fresh, they say the straight tail ones been dead. I do not no for sure but what I’ve always heard

OK I'll play. As you can see I'm not from the south, but I love crawfish!!

My guess is the one on the left isn't the one you want to eat. Why? Under cooked?

LSU experimented with cooking dead and live crayfish and found that both had the same amount of tail curl when cooked.

Straight tails are mostly the result of cooking crayfish packed tightly together.

Eat the one on the right. Don't eat crayfish or crabs that were not alive when you threw them in the pot of boiling water.
I don't know about that LSU study, but I don't think you can go wrong with the curled tail.

I'd say the one on the right just because it looks like it was boiled "properly". Have no idea otherwise. Leave the right or wrong for awhile though!

The one on the left was dead when it hit the pot. The one on the right was a live one. yum good eats right there.

Y’all are right! The straight tail, means it was dead before boiling. The curled tail means, it died while boiling. I don’t worry what LSU says. Don’t eat the straight ones!

Dead right.
Dump off water as soon as the tails float; pacific shrimp anyway. Segregate into at least two sizes before boiling if you have big ones mixed with smaller ones. Otherwise if over-cooked they get a little rubbery.
