Met this guy last week. He feeds his nuisance coons to crabs. Puts a coon in a crab trap, and 1 month later all that's left is a skeleton. Great idea if you live on the water. He says it's a perfect skeleton picked 100% clean in about 1 month.
Not sure I'd want to eat those crabs?? Could rabies be passed to crabs ?
Just a weekend trapper...

I remember after a destructive Tsunami somewhere, the locals stopped eating seafood, the bulk of their diet, because the wave killed 1,000's of people, and the return flow took many bodies out to sea, and the fish, crabs etc, were feeding on the bodies, and were loaded with human pathogens.

Sand fleas are actually most likely the critter that's cleaning the carcass so thoroughly. They can get into every nook and cranny, a swarm of them will pick something clean very fast. BTW, I don't know if sand flea is the correct name for the "bug". The ones I'm talking about live in saltwater, oftentimes very deep water. If a fish such as a halibut is left on a long line too many hours a swarm of sand fleas will turn a hundred pound fish literally into a bag of bones within hours.
A friend of mine submerges beaver skulls in a shrimp pot for the sand fleas to clean; works great.
