Curing? I'd be too nervous about diseases not being killed. That's understandable, I've been given cured wild hog meat. Ham and bacon, we always cooked it well as a precaution . The hams I thought were exceptional. Guess l may have to just give it a wirl.

When i lived in central Florida years ago there were a few country folk i knew that ate coon often. The glands in the back legs were taken out. They even talked about eating opossum.

Thanks for the replies guys, I've eaten plenty of raccoon just never cured it. Just thinking of a substitute for bacon end pieces wich I can't hardly find or afford.

Ive never cured it, but we eat mini bear on the daily. I dont think the process is any different, as long as you cook the meat to 165 cured or uncured. What is mini bear?

Why????? Of all the critters I have skinned, raccoon would be near the bottom, possibly tied with coyote. Hopefully, times aren’t that rough for us all soon to have to resort to a coon diet. Deer are much more plentiful, and way better table fare…. Good luck though, better cook it well, lots of parasites in the dumpster pandas.

Get in touch with Muddadg. He is our resident wild meat expert in NC. He cooked up some beaver tail and bobcat at our last convention. The beaver tail was as good as fatback with no castor taste. The bobcat tasted just like pork with the same consistency. Both very good.
He had some of the prettiest and clearest rendered coon fat I have ever seen. As clear and yellow as vegetable oil.

Thanks NE , TC1 I've eaten both coon and coyote. I can assure you raccoon meat is more palatable than coyote, in my opinion that is. I'm not trying to convince anyone to try any thing . I would prefer deer but CWD has hit our deer so hard we practically have them named around hear. I think I would actually feel better about eating raccoon sausage that I made than a Mc nugget or hot dog.  lol

Usually beaver was the #1 I'm thinking about putting a few beaver sets out just to eat them. Fur I can't seem to get put up well so not going to bother. Other than that I'm only trapping to get rid of the farm pest. Going to try a tire set in my bee yard for the culprit that keeps pulling my jar feeders off my hives. Never tired a tire set before. I figured peanut butter fish marsh mellows and some sugar water since it wants the sugar water in the feeders
