I grew up trapping and hooking turtles. Here's a couple recipes:

TURTLE SOUP

Clean turtle meat of any fat or skin.
Cut into pieces
Using clean cold water, parboil for 2 hours, clean off any floating scum.
After parboiling, add one diced onion.
Cut up 6 celery stalks, cut up some carrots, cut up some potatoes.
Dice a rutabaga.
Add all of these, but put potato in last so it doesn't turn mushy.
Add salt & pepper to taste.
Let simmer until vegetables are tender to your liking.

BEER BATTER TURTLE
Cut turtle into pieces.
Parboil 2 hours in clean, cold water.
Drain off.
Salt & pepper meat.
Brown in skillet using cooking oil.
For batter use beer and corn meal mixture or beer and Bisquick.
Dip meat into batter and deep fry until well brown.

Got a gift from my brother. It was 3 AA batteries with a note that said, Gift Not Included.

If you have an instant pot, it's much easier than parboiling and faster.
