I gave my brother a small 15lb beaver last spring. He put a rub on it put it in smoker. Smoked it like you would a pork butt then pulled it. His wife said she thought it was better than pulled pork. I thought it was almost the same as pork the sandwich I made with it..

Beaver chicken fried steak:: Slice into medallions, season with salt, cayenne, garlic, and onion powder. Then dust it with ranch seasoning.


Add the same seasoning to some flour until you can taste the seasoning if you try some flour on your fingertip.



Run the medallions through an egg wash then coat with the flour. Fry in hot oil until nice and brown. Delicious.





Bacon Wraps:

Marinate sliced medallions in Italian dressing overnight. Season with Cajun and ranch seasoning. Add a small piece of cream cheese, a jalapeño slice, and then wrap it on all sides with quality bacon so that it’s completely wrapped. Bake or grill until bacon is cooked. Party favorite.

Cut into small pieces and use it as a substitute for beef in fricassee.


I dissolve 2 cups of dark roux in a few inches of beef broth. Add a large chopped onion per pound of seasoned meat. Add a little water if needed.... a small can of tomato sauce, a small splash of Louisiana hot sauce, and 1 medium potato cut small or shaved.... when it’s done, crack a few eggs and drop into the bubbling pot and turn off the fire. Serve over rice or mashed potatoes. Mmmmm

Follow any good Irish stew or beef stew recipe substituting beaver for beef and it will be phenomenal.

Take the meat off the quarters and backstrap..

Apply a beef style rub to the meat.

Place mear in foil pans abd sdd a cup of apple juice to the pans.

Set smoker to 225 for about 4 hours or until tender.
