Folks, need a little help. I have a ton of ground beef and ground venison.
Want to make snack sticks without casings.
I have a smoker and oven. Either one will work for recipes.
Please let me know your idea's and recipes.

Jerkey shooter , I think snack sticks would dry too much without the casings.

Hi mountain Jerkey seasoning you can use it for the Jerkey shooter

Jerky shooter, garlic salt, black pepper, slow smoke with mesquite 150-165 temp. Nothing else needed.

Mom use to make summer Sausage similar to this. I believe she cooked it in a loaf pan with maybe a water bath(been a long time)

do you put them on a flat pan or on the grates in the smoker?
and about how long on the cooking time?

The LEM jerky canon was the original and still the best. Rest are cheap knock offs imo. Comes with recipes as well.

I do put them on grates so air and smoke can get all over. I generally smoke for 1.5-2 hrs then finish in the oven on super low if needed

do you guys use casings? or just squirt it out?
We Prefer to not have casings.

We are looking at using our own seasoning and then just freezing them in packs of 8-10.
Would they last that way?

I like the high mountain original blend snack stick and I use the casings smoke/ heat until internal temp is 160f

IMO you need some pink salt for a bit of a cure to get longer lasting life of the sticks.

I don't need cases on mine. I mostly do summer sausage but I've done sticks too. I used to buy seasoning kits but I can make it good with my well stocked spice cupboard.

if you cant find pink salt, (curing salt not that Himalaya sea salt nonsense) most grocery stores carry tenderquick. it has nitrates added to the salt already
