Any advice on sharpening them. They are very very dull at the moment. Thanks !

I learned to sharpen on water stones.
Everyone thinks wet stones need oil, that's the worst thing on a good stone.
Water only , learn to get an edge, it's work and takes time until it's sharp.
Then remember to touch it up after every use.
You'll never have a dull knike again.
10 DEGREE angle for a sharp knife.
23 DEGREE for a boning knife .
TRIED the gagets , the belts and all the other fast sharpening divices out there.
Ruined a few knives on them.
Have knives 70 years old sharpened on a wet stone and almost no wear on the knives , and can shave with them , if I want .
You buy a knike and see scratches from a grinder on them, it takes awhile to get an good edge on it.
Once you get it , and learn how to keep it , you'll never have a dull knife again .
Seen cheap knives and good knives totally ruined and nothing but a small piece of steel left after a season with the FAST SHARPENING GADGETS !

Ohio is right the best thing is a water stone but the stainless Lee uses is incredibly easy to sharpen. I'm not Lee obviously but I responded back to your post in Fall Coyotes

Mr. Lee has a video but I can't remember if it is just touching up with a steel.

One thing about stones. Do yourself a favor and buy the larger bench stones. It is way faster and easier to use them than those cheap little things where you can't get a proper stroke going before you run out of stone. and make sure you keep them flat as it is next to impossible to get a decent edge a knife with a dished out stone.

Are oil stones not supposed to use oil?

Found a Soft Arkansas, when I looked it up it says it’s an “Oil Stone”. Whomever had it previously used oil on it. Is this incorrect?

I've used a Lansky for years and that kit was supplied with a small bottle of oil. Could be I'm doing it wrong, but I use the stones "dry" and then apply the oil to clean the stones before I put them away. The oil lifts/floats the debris out of the crevices so I can wipe it clean.

Arkansas stones you can use either. Its recommended that oil be used because water will glaze the Arkansas over time. Waterstones cannot have oil on them as it will clog the pores.
