how does it end up with those rings, like growth rings of a tree? ive been using a no-kneed dutch oven recipe for quite awhile, but havent tried puttin' a staaaahtah goin yet grin those loaves look fantastic

I think those rings get there because of the shape of the inside of the proofing bowl.

Wow! I'm not a white bread eater. But, I'd make an exception for those!

Wife says he's weird and he has mild cussing that he bleeps out but this was the best resource she found that helped her make good sourdough.

Making a starter in the winter time up north ...can be a challenge. Unless you have endless amounts of cash and keep your house at 70 degrees..all the time.

But there are ways around this....if you keep your house at 62-63 with the Biden Fuel costs.

When I worked at the Ahwahnee hotel in Yosemite back in the early 2000s we had a genuine San Francisco sourdough poolish that was over 70 years old. During the Yosemite floods in the 90s the Park Service took the bakers in by boat to feed the poolish and keep it alive. They said they didn't want to be the ones that were responsible for letting it die.
