They ain't pretty like WT88's but they hold gravy great. You may have to add a little more flour, you want them to stand up like a scoop of ice cream before they go in the oven. In fact I use one of them scoops you squeeze the handle to drop them on the cookie sheet. Don't over mix them, just enough to get everything wet. Some folks call them cat's head biscuits I think.
Don't forget the home made hashbrowns too. Wash the potatoes and run them through a food grater, then rinse them in a strainer until the cold water runs clear. Heat a couple T of oil and a couple T of butter in the skillet. Put the potatoes in a dish towel and squeeze out any water. Then layer them in the skillet, don't flip them until they are nice are brown, don't even touch them except for S&P. Lay a plate, upside down, over them in the skillet and flip them onto the plate then slide them back into the skillet until the other side is browned. They look and taste awesome. Russet potatoes and real butter of course!

Oh Man,,they look awesome.I make my own butter,,so that should be a plus on the Bisquits and frying the potatoes. All these recipes are gonna kill me.
Facebook had a post going around about the Kansas State Fair winning biscuit recipe. Hudson all purpose flour, heavy whipping cream, and melted butter. Makes a great biscuit.

Around here...that’s a potato pancake
It is better to die on your feet than to live on your knees.
Potatoes diced quarter inch. Onions diced Peppers seeded and diced (bells if you got them but at least one cowhorn or jalapeño or poblano, two are better)
Thin layer of oil in a hot skillet.
Hash browns in a thin layer, fry until starting to brown, flip and fry until crisp.
Dang Jamie, the only thing I could critique on that awsum plate is there ain’t enough gravy to go over the hash browns. Upstate, I made a round of butter myself. Had about a quart of buttermilk left after the process and had to use it up so biscuits sounded good. Still have some left, so I’m thinking pancakes or waffles in the near future.

Potato pancakes around here need a binder, a little flour/egg to hold them together.

Those are O'Brian fries here, good but not real hashbrowns.

That Buttermilk from your homemade butter holds up very well in the freezer,,if you get a lot and don't want to waste it.
Had some left over turkey in the freezer from Thanksgiving so I thickened a couple quarts of stock, added the turkey and a bag of frozen veggies, wallah, turkey gravy over biscuits for supper tonight.
I like making this type stuff I can do anytime then put it on serve in a crock pot until we're ready to eat.
