Would it be a good idea to set baited 110s for rats underwater in close proximity to beaver lodges?

Lots of rats use the beaver houses-both live and dead houses. If I was gonna trap rats at a live beaver house under ice in winter I would trap out the beaver first. You will get the odd rat if you set the den entrance with 330's for beaver. When you have cleaned out the beaver you can leave a few sets around the house for rats and otters if you want.
Forget that fear of gravity-get a little savagery in your life.

You can still set the rat traps but you will likely be checking some snapped and empty traps from the beaver messing with them.

time for a round sub trap to be set to get rats swimming about get away from the 110.s around beaver lodges Good suggestion. Yes rats and mink will often just dive into that black funnel hole of the sub trap for whatever reason.
