I hope your business is successful. I just don't think its for me. After hauling grain for a few years I am aware of Aflatoxin. Its presant to some degree in every load of corn i ever hauled and also rice. If your not doing it before roasting whats the time line between testing and roasting? Those toxins are caused by mold. It only takes a few days for mold to grow. Roasting kills it pretty effectively but I am curious how you determine the level in your coffee before you roast it. The bottom line Mycotoxins are found in small amounts in various foods, including coffee.
However, their levels should be strictly monitored by producers and food safety authorities. When levels go above safety limits, the food products are recalled or discarded.
Research shows that the benefits of coffee still far outweigh the potential negatives. What’s more, there’s no evidence to suggest that low levels of mycotoxin exposure are harmful.
Still, if you want to minimize your risk, only drink quality caffeinated coffee and store it in a dry, cold place.
If you are concerned about nutrition and health benefits, you may also want to avoid adding sugar or heavy creamers. This will help keep your coffee healthy.

Back in the late 80's I was hauling a lot of white corn from around the Winterset IA area to Bonner Springs KS. Safeway had a mill there where they made all their white corn meal. The supervisor on the night shift was lazy. Instead of taking the samples himself he had drivers do it. A couple different drivers would sell that expensive white corn and buy field corn to replace it. Keeping enough white corn to give that supervisor as a sample. Federal Marshalls tailed the drivers eventually and they did time in a federal pen. Supervisor got fired. That old mill is still there but its a tourist trap now. Jeff, I looking forward to trying Trapline Coffees when Christine and I see you and Jessica in Escanaba this summer. Christine isn't a coffee drinker and since retiring I don't regularly have multiple cups anymore. So it's when we are out and about that I get my coffee fixes, lol. We want to say thanks for what you and Jessica are doing for trappers. I'll be buying coffee for sure!

Dark Roast, from Colombia/Guatemala. Kodiak is our darkest while Trapline is also technically a dark, it tastes more like a medium. Both are from Columbia/Guatemala... If it was Trapline blend she tried, she likely wouldn't like Kodiak but the opposite may hold true  ... Regardless, thank you for your support Wild_Idaho.
