I currently have two rabbits in my freezer and I want to thaw them, but I don’t currently have a cool enough space to thaw them and it’s to cold outside.
Would it work if I thawed the in slightly warm pickle solution?
Or would it slip and be wrecked?

Place the rabbits in a cooler the cooler will cool down and they will thaw slowly a cardboard box will do the same.

Are the rabbits frozen whole with the skins on or what-need more info.

Just thaw them in the fridge.
Freezing them whole with the skins on is the best way to keep them.
That is how I keep and thaw my snowshoe rabbits.
