Mr. Nessy, I'm trying to stay away from bread but, I've been having a craving for good Rye bread. Do you make rye bread and if so can you share a recipe. There are hundreds of recipes on line, but I have seen what your bread talent does with a few ingredients.

This is the guy that I got started with...follow this recipe ...it’s good !

It uses commercial yeast...Cuz I am sure you don’t have a sourdough starter.

This makes a fine bread too...until you slide into the Dark Side.of Sourdough...lol

Plus ..if your house is cool..like mine 64 degrees...

You can put the light on ..in your oven ,and leave the door open 1 inch...and that will suffice as your proofing box.

Put the dough in there for the resting ...in between folds.

Put the light on ..30 minutes prior ..to get it warmed up

I cook all my bread in a cast iron dutch oven.

Toss the Dutch oven and lid into the oven...and turn the dial up to 475 degrees and let that pan heat up for 45 minutes.

Then using that parchment paper as a sling...pick up the ends of the parchment paper and lower that into the smoking hot dutch..put the on and back into the oven for 20 minutes.

Then remove the lid ..and reduce heat to 425.. and bake for another 10-15 minutes until golden brown.

Then remove from dutch..onto a wire cooling rack
