That could have been a MLK Jr quote. It's what goes into the beef, it's pedigree, and upbringing. Not the color of it's hide.

But isn't it corn finishing that makes them marbled and yummy?
A friend of mine fed me some 100% grass (and brush) fed steak once, it tasted like venison. I'm not saying it tasted bad at all, just nothing like corn finished beef.

Yup, Angus (or any black breed) naturally come in two colors.

Black genetics in cattle can show as dominant black or recessive dun aka red.

Before wormers became available you couldn't keep the improved breeds down here.

Our woods cattle, aka cracker/pineywoods, first cousin to the texas longhorn are literally that, woods cattle that the Spanish left behind. They either lived or died under our heat, humidity, parasite, and screw worm pressure for a couple centuries before any of the southern states were created. The longhorn did the same in Texas.

Same goes for the spanish brush goat and gulf coast sheep.

All of these tough critters made do on the same stuff that deer do.

Now that's not to say these animals are the equal of a good british breed raised on good grass and grain for eating quality because they ain't. But where the angus or hereford is long dead from foot rot, screw worm, gut parasites or ticks the woods cow is dropping a calf every year and living into her twenties.

Tough critters.

And what draws me to mustangs. But that may just be my pie in the sky idea? Been eyeballing a few tat are coming up for auction in a few days. Narrowing down the list now.
