Anybody else like them? Yesterday I put 4 dozen hard boiled and peeled eggs in a gallon jar. Mixed white vinegar and cider vinegar 50/50. Put in about 1/4 cup of sugar, A chopped up onion, minced garlic, salt, pickling spice, and red pepper flakes. I like to poke a toothpick though each one pulling it out the side to let the pickle in. I will eat one in a week or so. The anticipation is twisting me up. Tipped it upside down a couple times just a minute ago.

Used to be able to get the penrose sausage juice from the bar to pickle them in. Those were great but resulted in some nasty gas.

I have bought pickled pigs feet. They are good. The ones I bought were in straight white vinegar.

That sounds good Danny.
We are having extra eggs nowadays....and a good time for my first batch.

I’ve made bread and butter pickles ...so pickled eggs shouldn’t be too Haahd..

The anticipation is twisting you up, I like that Danny! When I was a young man most of the bars always had gallon jars of them and I'd tear them up. Both eggs and sausages. I make them here at home and love'em. I want to do some pickled fish!
I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

I love pickled eggs. I do up two gallons every year. I put lots of sliced red onions and sliced beets in mine. My better half will fish all the beets out and leave me the eggs and onions

Delicious. I would not pierce the eggs with anything though. That’s a way of introducing botulism bacteria into an anaerobic environment with a survivable pH. Best to just wait a bit longer for the brine to work on its own.
Second the Koegels recommendation. I am just south of their plant. Great products and the brine is perfect as is!
