Hoping for a quick answer to this one.

I just boiled off a couple gallons of sap and I'm tired, can I freeze it for tonight and finish it on the stove into syrup tomorrow?

Added a photo of my Lil setup.

Ive done it often, dont even freeze it, just let it cool to nighttime temps before starting the next day.....never had a problem

Thanks guys, I got to tired and just froze it, I'm assuming it'll be fine since it's mostly sugar water at this point. I'll pull it out today or tomorrow to try and finish it. I need to go to the thrift store and find a smaller pot.

This was a test run. We have a wood stove and bigger pot ready, if the sap ever starts flowing heavy that is.

As I recall (from 40 years ago) it used to take 50-80 gallons of sap to make a gallon of syrup depending on sugar content.


I have nothing clever to put here.

Around 50 gallons of sap for one gallon syrup here.Buddy of mine just made 15 gallons of syrup.Only took him a few days because he has a pretty good sized evaporation system.

We don't boil our sap. We have a person custom boil what we want for syrup and we sell the bulk of our sap by the point of sugar times a rate per point. We have been really fortunate this year with the cold snaps as our sap is really clear yet and the last 2800 gallons were still averaging 3.0 sugar. You only need about 29 gallons of sap to make a gallon with that high of sugar. Amazing some of the setups we have near us that have really good setups for their receiving tanks, ROs, evaporators, filtering etc. The one place we go to does between 50-75K of sap each year. The other 30-35K.

When I used to make it I let the sap freeze. In the morning I would toss the ice. Hardly any sugar in the ice.
Not sure how much you have boiled off. It won't hurt to let it freeze but it might turn a bit darker.
If it freezes ,on your batch, I would not toss the ice.

We never tossed the ice.
The crew pulled last Friday and will finish about 45 gallons of syrup.
