When you Poach them do you sneak up on them with a spotlight? We just cook ours on each side and put our eggs over easy on Toast with Squirrel Gravy over the whole thing.
God please keep they 19 fallen UBB miners out of trouble up there.

I probably do them the way your mommies did.
Crack the eggs into a simmering deep frying pan of water. Scoop them out with a slotted spoon when the yokes jiggle just the right amount.
I've tried all kinds of dedicated poaching systems. They either didn't work as well, or took up too much space.
My mother had a dedicated egg steamer back the '50's. It made the best eggs ever, but took up way too much space for what it did.
Man who mistake shillelagh for fairy wand; see pixie dust, also.

While the egg is simmering in the pan of water...I spoon the hot water ovah the yolk until I get a white haze

The vinegar provides an acid that tends to keep the whites together and keep the yokes from over-cooking. I really doesn't affect the taste at all. Personally, (if I feel like it or even remember) I'll add a splash of lemon juice, which does the same thing.

I prefer poached deer, myself.
When I made poached eggs I just cracked them in a pot of hot water and cooked until done. Or sometimes if I was in a real hurry I just cracked them in a bowl/cup of water and nuked them. If you overcook them in the microwave by just a little bit though, you better have the yolk broken, because if not it will explode in the microwave.
As a younger bachelor I used to take an egg, crack it into a half a bowl of water, put in the microwave for a minute, and while it was cooking crush up a package of top ramen. When the egg came out with just boiling point water I would dump the top ramen in the bowl and mix it all up, chopping the egg into little pieces as I did so. Two bowls of that would make a good, quick, protein rich breakfast.
