here is a simple one
1 onion diced
1 red or yellow or orange bell pepper diced (green are green as in not ripe the other colors seem to taste the same so whatever is on sale)
1 zucchini (about 8 inches) halve length wise , halve those length wise again then cross cut so you have nice even pieces that are a 1/4 and about 1/4 inch thick
1 chicken breast 1/4 inch strips length wise , then cross cut at about 1/2 inch
3-4 mushrooms cut to abotu 1/4 inch slices
1 head broccoli bite size pieces
a large hot skillet with a little oil of your choice
onion first as it starts too get translucent add the pepper and zuchini
give that a couple minutes stirring regular to make sure nothing sticks
add the chicken and mushrooms, they are small pieces and you need get them cooked not over cooked
a few minutes with the chicken in add the broccoli pieces
a few shakes of worshtishire and a few of soy good shake of garlic powder
cook till the broccoli is your desired softness and all the meat has changed color to white with no pink
I use a lid to help speed the cooking in my 14 inch skillet I also double this all , but some veg makes too much liquid and you cook that off with the lid off.
that is the basics , you can serve it over rice , I don't any more
the sky is the limit on variations an flavor profiles depending on what you can and can't eat , I have a granulated mushroom soup base I use to season mine often , no carbs lots of flavor.
there are lots of sugar/carb containing stir fry sauces for all levels of heat and flavor.

bock choy
cabbage
turnips
chard
sweet peppers
hot peppers
celery
radish
Dacon radish
many types of mushroom
beans , peas , asparagus
garlic
ginger root
the meat is sliced small so it cooks fast , then it is the order of the vegetables on how much time they need to cook
some people use a little potato or corn starch to thicken the liquid into a gravy
basically anything you like goes
