I buy the bacon ends and mix with venison burgers and sausage.

I get rib eye ends from a local butcher. It is the round end off a loin. They are not an even thickness. It may be an inch hick on one side and a quarter inch on the other. I grill them. I eat a lot of them. It pays to get along with the butcher.

Upstate my dad is an old southern country boy and when money was tight (and it always was) s*** on a shingle was one of my favorite meals! He got creative with what meat he used at times. Man that brings back memories!

Cold cut ends= ham salad in many delis

A word of caution: a friend of mine had a deli shop and took home left over ends, etc and fed them to his dogs. Both dogs developed stomach cancer and died within two years.

It’s tough to find real roast beef and turkey it’s always that pressed junk unless a rare place specializes in the real stuff.

This place has both. There's a big difference in the grain in the real cuts compared to the pressed, reconstituted stuff. There's a big difference in price too, except the end are all $2.99 a pound. The most expensive deli meats they carry are $18.99 a pound.

There's another deli, with the same family name, that sells deli meat ends for just $1.99 a pound. Cheese ends are $2.49 there. It's so busy that the wait can be well over an hour, so I don't go much.
