Elderberries have served us well. I have several hundred wild ones, and recently added 2 more varieties to my farm.

if you put a half inch of water in a big stew pot then fill it with elderberries, (pick them when they turn upside down) turn the fire on real low with a lid on the pot, you will cook the juice out. then strain it through a screen collander, you will have some good stuff. mix it 50/50 with grape juice and make an excelent wine. or drink as is (mixed with grape juice). add pectin and suger and makes a delicious jelly too. Dont need grape juice for jelly. In europe they make syrup from the flowers.

Once the juice from the berries is cooked, elderberry is GRAS (generally regarded as safe) Don't consume any other parts of the plant.

Take a look in the pharmacy section the next time you shop. They are putting elderberry in dozens of medicinal products and supplements.
